"Chust
Oshi" is mostly prepared outdoors, over a high flame, in aluminum
cauldrons. The unique dark golden-brown color of the dish is formed without
artificial colorants, as a result of roasting bone-in meat and onions over high
heat.
The distinct
microclimate of the region, the meat of black rams fed with wormwood and
oregano, and the naturally soft spring water from the Gavasay and Kosansay
basins ensure the unique taste and quality of "Chust Oshi."
Granting
the status of a geographical indication to "Chust Oshi" legally
protects its name and traditional preparation technology.
At the
same time, this status guarantees the compliance of the product quality with
the state standards established for food products and expands the opportunities
for promoting the region's gastronomic brand internationally.
Today,
"Chust Oshi" plays an important role in developing gastronomic
tourism, supporting local entrepreneurship, and introducing Uzbek national
culture to the world.
